In February 2024, we installed a coagulating machine (12 bucket-type) at Aloha Tofu Factory, Inc.
Before this, the team relied on their experience to manually add soymilk and coagulant into tubs and handle the coagulation process by hand. Filling curd into the forming box was also done manually, which sometimes led to variations in tofu weight.
With the new machine in place, both the coagulation process and curd filling have become much more consistent. This has helped improve product quality while also reducing manual work.
