In February 2026, we delivered our “TOFU Shop Mini”, a small tofu production setup, to “Bistro Kamiya-Ichibe” in Kanazawa, Japan.
This restaurant offers an elegant and relaxing atmosphere where adults can enjoy fresh seafood from the Hokuriku region, locally sourced ingredients, and carefully selected local Sake that complements each dish.
Their freshly made tofu is prepared using traditional Den-en Nigari and rich soy milk made from locally grown soybeans. The fried silken tofu is crispy on the outside, while remaining smooth, rich, and full of flavor on the inside. Their chilled tofu, served with carefully selected premium soy sauce, is another delicious dish that brings out the natural umami of the tofu itself.
